Pruning: many different tasks are necessary to point the vine towards a harmonious balance, but pruning is the most important of these.
In winter, when the vine is at rest, the shoots of the previous year are cut off, leaving a few buds that will determine that delicate balance of force with which the plant grows again.
Too many buds causes an excess amount of grapes to be produced, whilst too drastic a cutting causes the growth of the green parts to become too vigorous, subtracting energy from ripening the bunches of fruit.
Cutting is evaluated plant by plant, and is an operation that can only be carried out by hand and by highly skilled personnel.
